- Why does the texture vary between honey types?
The texture of honey depends mainly on its natural sugar composition and how quickly it crystallizes. Some types of honey crystallize fast, while others stay liquid or more jelly-like for longer.
In Norway, honey has traditionally often been creamed before sale. Creaming does not mean that anything is added. It simply means the honey is gently stirred several times a day while it crystallizes. This breaks up the forming crystals into very small crystals, giving the honey a smooth, silky and spreadable texture.
Our Forest Honey and Late Summer Honey are creamed in this traditional way for a smooth, silky and spreadable texture. True Ling Heather Honey has a naturally dense and aromatic character, and is therefore sold in its traditional, uncreamed form.
- Is your honey raw and unheated?
Yes. Our honey is raw and unheated.
We handle our honey gently to preserve its natural flavour, texture and character. Nothing is added, and the honey is not heated as part of our process.
Norwegian regulations also protect honey as a natural product. Honey must not be treated in a way that significantly weakens or destroys its natural enzymes and still be sold as honey.
- Which honey is best for tea or breakfast?
For everyday use, breakfast and tea, Late Summer Honey is usually the easiest choice. It is mild, mellow and balanced — not too strong and not too sweet.
If you prefer a richer and creamier honey, Forest Honey is a good choice for bread, cheese and deeper flavour.
For a bold and aromatic honey with a long aftertaste, choose True Ling Heather Honey.
- What makes Norwegian honey different?
Norwegian honey reflects our cool climate, short flowering seasons and wild forage landscapes. Bees gather nectar from heather, wild berries, forest flowers and other natural sources, creating honey with distinct seasonal and regional character.
Honey is also protected by strict regulations. Nothing may be added to honey — such as sugar, syrup or other ingredients — and still be sold as honey.
Our honey comes from wild Norwegian nature, away from intensive farming. In Norwegian beekeeping, antibacterials are not used for bees, which helps preserve the natural purity and character of Norwegian honey.
We also work on a small scale and harvest with care, so the honey stays as close as possible to what the bees made.
