Our Late Summer Honey is collected by our bees on the peninsula of Nesodden in the Oslofjord, between Drøbak and Oslo. The peninsula has a rich and various flora, with plenty of forest and wildflowers.

This honey is made from nectar from flowers blooming between the last weeks of July and end of August. White clover, small-leaved linden and true heather are the biggest sources of nectar to this honey.

Our honey is always pure, raw, unheated and unfiltered. We only produce raw honey, because we want our honey to be the way nature made it for us.

Each jar contains 250 grams (0.55 lbs) of honey.

Our jars are boxed in nature friendly cardboard boxes, for safe travelling.

Pure, Raw Late Summer Honey:

Flavour

Our Pure & Raw Late Summer Honey has a rich and slightly dark flavour. It is not as strong and dark as our Heather Honey, but you will still taste the characteristic flavour of heather in this honey.

Use

We prefer this honey when we don’t want the honey to be too strong or too sweet. We use it as a spread, with the cereal, for sauces and dips and for baking.

It can of course be used like other types of honey for marinating food or next to a board of charcuterie, on the yogurt or ice cream.

Consistency

Creamy.

Creamy honey has a long shelf life. When stored dark at stable room temperature (approx. 20°C / 68°F) it will stay stable and not change consistency.

Norwegian honey is usually sold creamy. Norwegian beekeepers rarely sell liquid honey. To make our honey creamy, we gently stir our honey for a few minutes several times a day. After a few weeks, it becomes creamy and delicate, ready to be transferred into jars.

What to do if the honey has been exposed to warmer temperatures?

If creamy honey is heated or has been placed at a warm spot for a while, the crystals will start melting, and the honey is about to become liquid again. If so happens, you can choose to either melt it by leaving it in warm water or give it a gently stir.

If leaving it in warm water, make sure the temperature doesn’t exceed 45°C (113°F). By gently stirring it, you are mixing the remaining crystals with what is melted, and the honey will eventually become creamy again. You might have to stir it gently a couple of times a day for a while.

Therefore, we only produce and sell pure, raw honey, which means our honey is unheated, unfiltered and unpasteurized.
