A Slightly Dark, Rich Flavor

Our Pure & Raw Late Summer Honey features a slightly dark yet mellow sweetness with a subtle hint of heather. It’s not as intense as our Heather Honey, but you’ll still sense the earthy undertones that make Norwegian honey so distinctive.

Perfect for Everyday or Gourmet Use

We reach for this honey whenever we crave something not too strong and not too sweet. Try it on:

  • Toast and Cereal – A smooth morning treat without overpowering sweetness.
  • Sauces and Dips – Add natural richness to savory or sweet recipes.
  • Baking – Incorporate into bread dough or pastries for a soft, aromatic sweetness.
  • Marinades – Perfect for chicken, fish, or even grilled veggies.
  • Desserts – Drizzle over yogurt, ice cream, or fruit for a mild honey kick.

Creamy Consistency

Our Late Summer Honey is carefully stirred over several weeks to create a smooth, creamy texture. Many Norwegian beekeepers prefer this form, as it remains stable when stored at room temperature (around 20℃ / 68℉) in a dark place. By gently stirring the honey, we ensure a delicate, spreadable consistency before it’s transferred into jars.

What If It Warms Up?

If creamy honey is exposed to higher temperatures, it may begin reverting to a more liquid form. You can either:

  • Warm it fully in water below 45℃ (113℉) to melt the crystals and enjoy it as liquid honey.
  • Stir gently several times a day to reintroduce crystals and regain its creamy consistency.

Our bees collect Late Summer Honey on the Nesodden peninsula in the Oslofjord, situated between Drøbak and Oslo. The region offers a diverse range of wildflowers and forest flora between late July and the end of August. Key nectar sources include white clover, small-leaved linden, and true heather.

Size and Packaging

Each jar contains 250 grams (0.55 lbs) of honey. We box our jars in nature-friendly cardboard to ensure safe travels, even for international shipping.
